My name is Llewellyn Clarke. I live on the beautiful island of Nevis in the Caribbean, with my wife, Violet and my three boys, Deus, Joseph and Benjamin. Our business is located within the lush, fertile lands of Rawlins Village known as the ‘breadbasket of Nevis’. Surrounded by an abundance of local fruit and fresh produce with intense colours and flavours, Nevis is the perfect place to create exceptional quality food.

Born in Manchester, England, I distinctly remember my first cooking experience making fresh bread and Nevisian coconut tart with my mother. This ignited my journey to becoming a chef and working in some of the best restaurants in London and Canada, including Le Caprice, The Ivy and Auberge du Pommier. It was this skill of producing high quality food with top quality produce that I took with me when I immigrated to Nevis in 1999.

Since this time I have produced gourmet hot pepper sauces in a variety of flavours, such as thyme, papaya and guava. My freshly made local ice creams include mango, soursop, coffee and Jack Daniels for the drinkers! Our Jams and chutneys are renown for locking in the flavour of the Caribbean, while the milled products such as breadfruit flour is a winner with the health conscious and those on gluten free diets.

My signature products however are hot pepper and thyme sauce closely followed by mango and hot pepper sauce, developed over the years to produce an unforgettable taste experience. These products are enjoyed locally and are essential souvenir items for many tourists. Served daily at the famous Four Seasons Resort and Sunshine’s Bar and Grill and sold at local supermarkets, these unique robust sauces are infused with the Caribbean experience of heat with a little sweet!
